While the extreme climates of New England, the upper Midwest, and eastern Canada boast the best syrup climate, trust me there is plenty of syrup being made outside of the Maple Belt. It’s mid January and everyone is asking me “When is the right time to tap trees?”įor the purposes of today’s post, I’m gonna stick to the Maple Belt.
